Edible Water Tubers

I’ve been thinking about this ever since I saw the Hunger Games movies (the first two) and read all three books. I wondered if there really was an edible tuber called Katniss. Guess what? There is. I don’t live in a place where I can grow anything, but as we travel around, if some of you who have the property with which to grow them will keep in touch, you can share your recipes with me, and perhaps invite us (just my husband and myself) dinner and we can try them out. We love meeting new people. Depending on where we are staying, we may be able to reciprocate the invitation.

If you have tried any of these let me know. Of course I know about blueberries, mulberries, and artichokes (not the Jerusalem ones). Personally, I never met a berry I didn’t like.

  1. Thank you for the links and information. We have elderberries in Idaho. They are ripe now. I like to make a concentrated tea by boiling the berries, straining the juice, and adding honey or sugar. They are suppose to be a natural cold remedy, but I haven’t noticed if it helped.

  2. For colds I drink Echinacea tea with local honey plus I take the capsules and lots of vitamin C. If I’m around people that are showing symptoms of a cold, that’s when I start taking the echinacea. I drink the tea and take the capsules for two weeks to build my immune system. Most of the time I don’t get it. If I happen to get the winter crud that’s almost as bad as the flu I eat a fried egg sandwich on whole wheat bread with lots of raw onion, put a warm Vicks Vaporum compress over my throat, and go to bed. The next day I’m fine.
